Richard Simmon’s Fired Up Buffalo Chicken Wings

I was asked to do some food styling for Richard Simmons. How could I resist? I was too curious to see if he would arrive in satin boxers with his fro perfectly coiffed and to my delight he did. He is loud, lovely and bigger than life. So much energy and so much fun. “Say Farewell to Fat” one of Richard Simmon’s many cookbooks targeted at losing weight has countless great recipes including those with lots of fat and calories like this one. Richard told me “sometimes the key to weight loss is portion control”. These wings are baked not fried but they are still wings.So if you are trying to shed a pound or two maybe this recipe is not for you or maybe just eat one. Good luck with that these chicken wings are delicious!

The Ingredients

1 lb chicken drumettes

1/4 cup hot sauce

1 Tbsp worchestershire sauce

2 Tsps paprika

1/8 Tsp cayenne


The Method

In a sealable plastic bag combine all the ingredients

Seal and shake to coat all the chicken well

Refrigerate and marinate 30 minutes (or even overnight)

Preheat oven to 425 F

Arrange drumettes in a single layer on a baking pan

Bake for 30 minutes or until done turning after 15 minutes

To Serve

Place drumettes on a platter and arrange with dip and celery sticks

1 cup fat free blue cheese dressing

8 celery sticks
