We have this little Portuguese restaurant we love to go to. It is a Typical Churrasqueira – Portuguese for barbecue. They make really good chicken. But sometimes we just don’t feel like going out so I make it at home. This recipe works really well on a rotisserie, on the barbecue or even in the oven.
Here’s my recipe
One 3 -4 lb. chicken for rotisserie style or 6 chicken pieces for oven or grill
½ cup of White wine
1 tbsp of Olive oil
Salt & pepper
1 cup Piri piri sauce (you can use store bought)
Piri Piri Sauce
6 – 8 chilies
2 cloves of garlic
¼ cup of olive oil
¼ cup of white wine vinegar
Mix all ingredients well in a food processor and store in a glass jar in the fridge for several hours to allow flavours to blend. Piri Piri sauce will keep well in refrigerator for several weeks.
With a sharp knife make 2-3 gashes across the breast and legs for the marinade to penetrate
Generously coat the chicken inside and out with Piri Piri sauce, white wine, olive oil & salt and pepper
Let marinate in refridgerater 24 hrs, turning several times
On the rotisserie – simply truss whole chicken, skewer and roast for aprox. 1 hr, basting occasionally with marinade
In the oven – place pieces in a baking dish careful not to overlap, baste with marinade and bake in a preheated oven @ 350 degrees farenheight for aprox. 1 hr.
On the Grill – Pre heat BBQ or grill to high, place chicken pieces skin side down for 10 minutes, turn off one side of the BBQ and place chicken pieces skin side up off the flame. Grill for aprox 1 hr. basting frequently with marinade. On a grill turn heat down to medium and cook for aprox. 35-45 minutes turning & basting frequently.
Serve with rice, Parissiene potatoes or potatoes of your choice, Piri Piri sauce, black olives & bread
