Curried Chicken, Island Style

Curried Chicken CUI just love any kind of chicken or meat, slowly cooking in a big pot with vegetables and spices that fill the house with aroma and the promise of good things to come. This Curried Chicken is Jamaican inspired and one of my favorite and easiest recipes to make. This winter has been so cold I always have a pot of something yummy on the stove, and Curried Chicken is a regular and a family favorite.

Here’s my super easy, super delicious recipe.

The Ingredients

I whole chicken cut into 10-12 pieces
1 Large onion diced
1 Clove of garlic, smashed
1 scotch bonnet or jalapeno pepper diced
2 Tbsp Jamaican curry powder
1/2 Tsp of fresh or dried thyme
2 oz of vegetable oil
2 Large potatoes cut into 1″chunks
4 ozs of dry white wine (not traditional) but good
3-4 cups of good quality chicken stock (enough to cover chicken and potatoes)
Big splash of Jamaican hot sauce
Salt and pepper to taste

The Method

Heat a large pot over medium heat
Add the curry powder and warm for 1 minute
Add the oil, the onion, garlic & thyme
Cook for 2-3 minutes until onions have softened
Add the chicken pieces, salt the chicken
Brown for 3-4 minutes turning with tongs
Add the white wine
Scrap and deglaze the bottom of the pot
Add potatoes and cover with chicken broth
Add a good splash of Jamaican hot sauce
Cover pot and bring to a low boil
Reduce to simmer and remove the cover
Cook for 45 minutes to an hour
until potatoes are tender and chicken is almost falling off the bone
Test for seasoning

To Serve

Serve with white rice, rice and peas or Roti, ice cold beer and favourite hot sauce.
